Browse the shop, add cuts to your cart, and proceed to checkout. You'll enter your shipping address, select a shipping method, and pay securely via Stripe. We accept all major credit and debit cards, including Visa, Mastercard, American Express, and Discover.

You don't need an account to place a one-time order, but creating one lets you track shipments, reorder easily, and manage any subscriptions.

There is no minimum order for one-time purchases. You can order a single cut if that's what you want. Free shipping applies to orders over $150 — below that, shipping is calculated based on your state and order weight.

Absolutely. Simply enter the recipient's address as the shipping address at checkout. Our packaging is already gift-worthy — the signature dark-blue box with a thank-you card inside creates a strong first impression on any doorstep.

For holiday and special occasion gifts, we recommend The Reserve Box or the Holiday Reserve Box. Contact us if you'd like a personalised note included.

Shipping & Delivery

Standard shipping is 2-day air. We ship Monday through Wednesday to ensure your order does not sit in a carrier facility over a weekend. If you order Thursday through Sunday, your order will ship the following Monday.

Next-day air is available for orders placed Monday or Tuesday. Your order will arrive the following business day.

You will receive a tracking number by email as soon as your order ships.

Free standard shipping applies to all orders over $150. Subscription boxes (Curated Box and Build Your Own) always ship free regardless of the order total.

For Subscribe & Save individual cut subscribers, free shipping applies to any subscription order over $150. Below that, standard shipping rates apply.

Yes — we ship to all 50 states. Shipping to Alaska and Hawaii takes an extra day and carries an additional surcharge due to carrier rates. Shipping costs are calculated by state and order weight at checkout.

Every order ships in our signature dark-blue insulated box with a premium vacuum-sealed liner, dry ice, and our welcome insert. The beef is vacuum-sealed and flash-frozen at peak quality before packing.

The insulation maintains safe temperature for up to 24 hours after arrival — so if you miss the delivery, it will still be in excellent condition. We recommend moving it to your freezer or refrigerator within 2 hours of arrival just to be safe.

As soon as your order ships, you'll receive a confirmation email with your tracking number and a direct link to the carrier's tracking page. You can also view tracking information in your account under Order History.

If you haven't received a tracking email within 48 hours of placing your order, check your spam folder first — then contact us and we'll look into it.

Partially thawed beef that still feels cold to the touch is completely safe — move it to your refrigerator and use it within 3–5 days, or refreeze it. Vacuum sealing means it will still be in excellent condition.

If your order arrived completely warm or you have any concern about its condition, do not use it. Contact us immediately with a photo and we will replace the order or issue a full refund — no questions asked. This is covered under our 100% satisfaction guarantee.

We offer three subscription plans:

  • Curated Box ($129/month) — Our butcher selects 4–6 premium cuts each month. Always includes seasonal and limited offerings. Includes recipe cards and free shipping.
  • Build Your Own ($149/month) — Choose exactly which cuts you want in your monthly box. Flat $149 regardless of selection. Update your cuts before the 25th of each month. Includes recipe cards and free shipping.
  • Subscribe & Save — 12% off all individual cuts on a recurring schedule you set. Free shipping on orders over $150.

Build Your Own is a flat $149 per month, regardless of which cuts or quantities you select. Pick two ribeyes and a filet, or six NY strips — the price is always the same.

This is by design. We wanted a subscription that offers genuine flexibility without the anxiety of tracking per-cut costs every month. Choose what you want, know what you'll pay.

Your first box ships within 3–5 business days of subscribing. After that, subscription boxes ship on the 1st of each month. To have a box included in a given month's shipment, your subscription must be active by the 25th of the prior month.

For Build Your Own subscribers: update your cut selection anytime before the 25th through your account dashboard. Changes take effect on the next shipment.

All subscription management is available in your account under the Subscriptions tab. You can:

  • Skip a month — no charge, no shipment for one cycle
  • Pause — pause for 1, 2, or 3 months, or until you manually resume
  • Cancel — cancel anytime with no fees or penalties

All changes made before the 25th of the month take effect for that month's shipment. Changes after the 25th apply to the following month.

For Curated Box subscribers, the selection is made by our team each month. You can leave notes or preferences in your account and we'll do our best to honour them.

Annual billing saves 15% on the Curated Box and Build Your Own plans. Annual plans are billed upfront for the full year and are non-refundable after the first shipment ships.

The Beef & Quality

All of our beef is sourced from family ranches in Idaho. We work directly with a network of ranchers who share our standards for animal welfare, open-pasture grazing, and responsible ranching practices.

Every animal is raised without growth hormones or unnecessary antibiotics, processed at USDA-inspected facilities, and aged under our control before being packed and shipped directly to you.

Aging allows natural enzymes within the beef to break down muscle fibre over time. This produces two measurable effects: tenderness increases as connective tissue breaks down, and flavour deepens as moisture concentrates and complex proteins develop.

Our beef is wet-aged, meaning it ages in vacuum-sealed packaging. This preserves the beef's natural moisture while allowing the enzymatic process to work. At 21 days, the difference in tenderness and flavour versus a 7-day aged cut is substantial and consistently noticeable.

No added growth hormones, ever. Our ranching partners do not use hormone implants at any point in the animal's life.

On antibiotics: our cattle are raised without routine prophylactic antibiotic use. If an animal becomes sick and requires treatment, it is treated — that is the ethical and responsible approach. Any animal treated with antibiotics is held well past the withdrawal period before processing, in full compliance with USDA regulations.

None. No artificial colors, no preservatives, no fillers. The only ingredient in our beef is beef. Vacuum sealing and flash freezing are our preservation methods — no chemicals required.

Our beef is USDA inspected and graded Choice to Prime depending on the cut and season. Steaks like our Ribeye and Tomahawk consistently grade at the high end of Choice or Prime due to their marbling characteristics. All beef is processed at USDA Est. 1840423-certified facilities.

Our primary herd is Black Angus, chosen for its exceptional marbling characteristics and its proven suitability to Idaho's climate and terrain. We also work with select ranchers raising Angus-Wagyu cross cattle for certain premium seasonal offerings — these are available exclusively to subscribers when in season.

Flash freezing at peak quality — immediately after aging — produces a product that is genuinely equivalent to fresh in taste and texture. The key is speed: industrial flash freezing forms micro-crystals that do not damage muscle fibre, unlike slow household freezing which creates large crystals that rupture cells and degrade texture.

What's sold as "fresh" at most grocery stores has often been in transit or display for 7–10 days. Our beef is frozen at its best moment and arrives in exactly that condition at your door.

Cooking & Storage

The best method is slow refrigerator thawing. Place the vacuum-sealed package in the refrigerator 24 hours before you plan to cook. For thicker cuts (over 1.5 inches), allow 36–48 hours.

If you need to thaw faster, submerge the sealed package in cold water and change the water every 30 minutes. Most steaks thaw in 1–2 hours this way.

Never thaw at room temperature — this allows the outer layer to enter the temperature danger zone while the interior is still frozen. Never use a microwave to thaw beef you intend to cook properly.

  • Frozen (vacuum-sealed): Up to 12 months at 0°F or below. Quality is best within 6 months.
  • Refrigerated after thawing: 3–5 days in the vacuum seal. Once opened, cook within 1–2 days.
  • Opened and uncooked: 1–2 days maximum in the refrigerator.

Check the use-by date on the label of each individual cut for specific guidance.

Target temperatures (pull 5°F early — carryover cooking does the rest):

  • Rare: Pull at 120°F · Rests to 125°F
  • Medium Rare: Pull at 125°F · Rests to 130°F — our recommendation
  • Medium: Pull at 135°F · Rests to 140°F
  • Medium Well: Pull at 145°F · Rests to 150°F
  • Well Done: Pull at 155°F · Rests to 160°F

Medium rare is what we recommend for all our steaks — it is the temperature at which the 21-day aging produces its best result. An instant-read probe thermometer is the single most important tool for cooking steak properly.

During cooking, the muscle fibres contract and push moisture toward the centre. Resting allows those fibres to relax and reabsorb that moisture evenly through the steak. Cut it immediately and that juice runs straight onto your board — not your plate.

Rest time by cut: 5 minutes for cuts under 1 inch, 8 minutes for 1–1.5 inches, 10–15 minutes for thicker cuts like tomahawk or T-bone. Use a wire rack so air circulates underneath and the crust does not steam.

This is not a limited guarantee. We are a small company and our reputation is built one order at a time. If something is not right, we want to know and we will make it right immediately.

No. Returning perishable food is impractical, and we would never ask you to do it. Contact us with your order number and a brief description of the issue — a photo helps but is not required — and we will process your replacement or refund immediately.

We process refunds on our end immediately upon approval — typically the same day or the next business day. Your bank or card issuer then takes 3–7 business days to post the credit to your account, depending on their processing times.

If you haven't seen the refund after 10 business days, contact us and we'll look into it with Stripe directly.
